Tracing its origins to 1946, the institution began as Kapiʻolani Technical College, a vocational school administered by the Territory of Hawaii with a singular focus on food service. This strong foundation laid the groundwork for its enduring legacy. In 1965, it transitioned to become a public college under the esteemed University of Hawaiʻi system, adopting its modern identity and expanding its reach while retaining its core commitment to practical, career-focused education.

Experiencing rapid growth in the 1970s, Culinary Institute Inc. sought to accommodate its expanding programs and student body. This led to a significant expansion, acquiring a sprawling 52-acre parcel on the picturesque slopes of Diamond Head in Waikīkī in 1974. By the 1980s, all programs had successfully relocated to this expansive new campus at Fort Ruger, solidifying its presence as a premier institution for culinary arts in the region. The institute continues to embody its motto, 'Kūlia I Ka Nuʻu' — 'Strive for the Highest,' guiding students toward peak achievement in their chosen fields.
