About Culinary Institute of America at Greystone

Experience world-class culinary education in an iconic, historic Napa Valley setting.

The Culinary Institute of America at Greystone offers an unparalleled education for aspiring culinary professionals, housed within the magnificent Greystone Cellars building in California's famed Napa Valley. Known for its immersive programs and state-of-the-art facilities, CIA Greystone provides students with hands-on experience in a truly inspiring environment.

At its heart is the historic Greystone Cellars building, a testament to ambition and innovation from the late 19th century. Conceived by William Bowers Bourn II, the building was initially envisioned as a cooperative winery to empower local vintners. Completed in 1889, it was hailed as the largest wine cellar in California, if not the world, and was notably the first California winery to operate and be illuminated by electricity. This grand structure, which cost $250,000 at the time (over $8.75 million today), now serves as the dynamic backdrop for cutting-edge culinary education.

Students at CIA Greystone benefit from exceptional academic strengths, including expansive 15,000-square-foot culinary arts teaching kitchens and a dedicated 5,000-square-foot Viking Teaching Kitchen capable of accommodating up to 40 students. These facilities are equipped with a diverse array of advanced cooking appliances, from rotisseries and induction cooktops to stone hearth ovens and combi steamers. Beyond the kitchens, the campus boasts practical learning environments such as the Wine Spectator Greystone Restaurant, the Bakery Café by illy, a chocolate-making facility, and demonstration theaters, ensuring a comprehensive and practical student experience.
